Shelter In Place Inspired Simple Recipes

During shelter in place, one of my constants has been cooking and baking. I have baked so many things just so that I had something to do, and sometimes so that I could go deliver the treats to my friends. 

Making food brings at least some comfort, and I’ve tried a variety of both horrible and fantastic recipes. When I finish the simple ones, I feel a little happier inside because the harder ones usually don’t turn out very well. Here’s three of the simple recipes I have tried during shelter in place: salted caramel potato chip cookies, banana pancakes, and an oreo cookie cake. 

Salted Caramel Potato Chip Cookies (inspired by the recipe on Tasty.co)


  • 1 cup of (2 sticks) salted butter
  • ½ cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 ½ cup of flour
  • 1 cup of crushed potato chips (trust me!)
  • Caramel sauce

Baking steps:

  1. Leave the butter out to melt in room temperature 30-60 min.
  2. Mix the butter with the sugar for 10 minutes (I used a hand mixer, but you can use whatever you’ve got handy)
  3. Preheat oven to 350 degrees F
  4. Add vanilla extract to the mixture
  5. Add flour bit by bit to the mixture
  6. Stir in potato chips 
  7. Roll into small balls and lay on a sprayed pan
  8. Bake for 16-18 minutes until the edges are brown
  9. Drizzle caramel sauce onto cookies

Banana Pancakes (inspired by Tasty.co)


  • 2 bananas
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon

Cooking Steps:

  1. Mash the bananas in bowl
  2. Mix in the egg, then the vanilla and cinnamon
  3. Pour pancake batter onto pan and wait to see bubbles then flip (repeat until batter is all gone)

Oreo Cookie Cake


  • 1 chocolate cake mix
  • 1 vanilla cake mix
  • 1 container of oreos
  • Milk to taste
  • 1 container of chocolate frosting OR 
    • ½ cup (1 stick) of butter
    • ⅔ cup of cocoa powder
    • 3 cups of powdered sugar
    • ⅓ cup of milk
    • 1 teaspoon of vanilla extract

(in order to make the homemade frosting just mix it all together)

Baking steps:

  1. Bake each cake in an 8 inch pan
  2. Separate oreo cookie with filling
  3. Crush the oreo cookies into oreo dust
  4. Mix the oreo filling with a bit of milk, continue mixing in milk until it’s the consistency you want
  5. Apply the chocolate frosting in between the cakes and around the sides, and then spread the oreo frosting on the top of the cake
  6. Sprinkle the oreo dust on top of the cake
